This crispy golden sandwich is the perfect combination of salty and sweet and is filled with aromatic
ginger, green onions, and a little bit of soy sauce. Coating the sandwich in sesame seeds before cooking
adds a slightly nutty flavor and great texture to the sandwich.
- 4 green onions (green and white parts), chopped
- 10 oz raw peeled jumbo shrimp
- 1 anjou pear, peeled* and grated
- 1.5-inch piece of ginger, grated
- 1 tbsp of reduced-sodium soy sauce
- 2 large eggs
- 8 slices of whole wheat sandwich bread
- 2 tbsp of raw sesame seeds
- 1 tbsp of sweet and sour sauce for dipping (optional)
- Chop the green onions and finely chop the shrimp on a large cutting board together, or pulse for a quick blitz in the food processor.
- Remove from the food processor and add grated pear, ginger, soy sauce, and egg yolk (reserving the egg white), and then mix it all.
- Divide and spread the filling into four pieces of whole wheat sandwich toast and top each sandwich with the remaining slices of bread.
- Brush the egg white onto both sides of each sandwich and press each sandwich into sesame seeds. Using a grill pan or panini press on medium-high heat, toast each sandwich for 2.5 minutes on each side or until golden and the shrimp is cooked through.
- Slice up into triangles and serve with sweet and sour sauce.
*We peeled the pear in this recipe so the filling has a smooth and softer texture. The peel of pears is where most of the fibre comes from. If you prefer, you can leave it on but the texture will be different.*
